Butcher Knife Description

 

A butcher knife or butcher's knife is a knife designed and used primarily for the butchering or dressing of animal carcases.  From the late 18th century to the mid-1840s, the butcher knife was a key tool for mountain men. Simple, useful and cheap to produce, they were used for everything from skinning beaver, cutting food, self-defense, and scalping. Today the butcher knife is used throughout the world in the meat processing trade. The heftier blade works well for splitting, stripping and cutting meat. The French chef's knife is a derivation of the butcher knife, and is used as a general utility knife. Other similar meat-cutting knives include the carving knife and the cleaver. The carving knife usually is designed for slicing thin cuts of meat and often has a blunt or rounded point, with a scalloped or granton blade to improve separation of sliced cuts of meat. The cleaver is similar to the butcher's knife, but has a lighter and thinner blade for precision cutting.

Blade Details

This knife is made from Pattern welded Damascus steel.  Pattern welded Damascus steel is a hard heat treated, folded carbon steel.  There are 11 pieces of steel, folded five times, making 352 layers. The steel is the perfect combination of hardness and durability with a Rockwell hardness rating between 55 and 56 HRC.  High carbon damascus steel must contain layers of high carbon steel. The high carbon steel we use is 1095 steel which is the highest content carbon steel used in swords. The combination of the steel layers creates a sword that is strong enough to hold a powerful edge while having the strength and flexibility to withstand powerful collisions.  This makes the perfect steel for swords. The handle is black horn with an HRC of 55-56. It comes with a leather sheath.

Butcher knife

I bought this knife for my boyfriend who was looking for a good quality knife to cut different cuts of meat. He loved it and immediately knew it was Demascus steel. The knife was oiled upon opening, which was amazing! The reason for one star less that 5 is that it didn’t come as sharp as he and I expected. But the knife sharpening kit is on the way! So we are happy!
